Scoville heat unit rating: 3,500 – 4,500
Towards the end of the jalapeño growing season they begin to turn bright orange. They are kept on the main plant as long as possible. When they have turned a deep red and have lost much of their moisture, they are selected to be made into chipotles.
Smoking is the traditional Mexican way of preserving jalapeños.
These chillies have a rich smoky aroma with undertones of dark chocolate. They add a perfect balance of heat and flavour it adds real depth to dishes.
Soak them in hot water for a few minutes and they rehydrate for adding to the pot.
