Simon aka The Chilli Jam Man very kindly agreed to send across a sample of his infamous Three Peaks Chilli Jam.

All Jams from the Chilli Jam Man’s are approached in a refreshing process as the ingredients are kept as pure and simple as possible. They are all locally produced and there is no use of preservatives, colourings or anything remotely resembling an E-number.

The box arrived the very day after we spoke (so you can be sure that postage is quick) and was heartily stamped with the Chilli Jam Man logo.

The label is minimalist in design (though these have been fantabulously redesigned recently), saying what it needs to, the logo really stands out and it covers of the stuff you’d expect.

Upon opening the jar we had a healthy sniff and you get this wonderful garlicky almost oriental smell – and looking at the ingredients that would come from the fish sauce which has been added.

This is a runny jam (it has no chemically gelling agents in it) and it has small bits which add a really nice texture to it.

The taste is sweet to start off with and after two or three seconds a fair old kick of chilli heat comes in – the Bhut Jolokia, the Habanero and the Birds Eye chilli heat comes in – it definitely gives a decent burn, this is exceptionally moreish – we devoured the jar in a matter days!

Here we have used it in a stir fry … we stir fried it for 4 minutes. Added some chopped herbs and added 2 large spoonfuls of Three Peaks Chilli jam and hey presto – the best stir fry this side of the far east – which had lots of flavour and a nice burn to it!

This pepper occurs naturally in North Eastern India. In 2007, it was confirmed by Guinness World Records to be the Hottest Chilli in the World, replacing the Red Savina, which was the Guinness World Record holder at that time.

In 2000, scientists at India’s Defence Research Laboratory reported a rating of 855,000 units on the Scoville Heat Rating Scale, and in 2004 an Indian company obtained a rating of 1,041,427 units.
